Atherosclerosis is a complex inflammatory process in the vascular wall, engaging in particular the endothelial cells lining the inner surface of the vessel wall and the smooth muscle cells forming its muscular coat. This process is multifactorial, involving oxidative stress and endothelial dysfunction as well as immune cells, pro-inflammatory molecules, triglycerides and circulating cholesterol carried by low density lipoprotein (LDL) particles (see Figure 7). Various dietary components in oats have the potential to exert anti-oxidative or anti-inflammatory effects and to beneficially affect endothelial function.”
